Sushi Chef – Chef de Partie

About the role

The resort is seeking a skilled Chef de Partie specializing in sushi to develop and deliver Japanese menu offerings across multiple dining concepts, ensuring luxury standards and guest satisfaction.

Key responsibilities

• Develop and introduce sushi, sashimi and maki selections for à la carte, buffet, themed nights, private dining, weddings and VIP events.
• Maintain strict HACCP and food‑safety controls for raw seafood, manage inventory, and coordinate with Sous Chef on shortages and substitutions.
• Support the sushi section across all outlets, ensuring consistent luxury presentation and service.

Required profile

• Diploma or Certificate in Culinary Arts or related field.
• 2‑3 years experience as Chef de Partie or strong Demi Chef de Partie in sushi/Japanese cuisine.
• Previous experience in a luxury hotel, resort or high‑end Japanese restaurant preferred.

Required skills

• Advanced sushi and sashimi preparation (nigiri, maki, uramaki, hosomaki, futomaki, temaki).
• Japanese knife skills and precise fish/seafood cutting techniques.
• Knowledge of HACCP, food‑safety standards and inventory management.
