Chef de Cuisine – Russian Cuisine

About the role

Lead and manage all kitchen operations at Kuredhivaru Resort & Spa, delivering authentic Russian cuisine with high standards of food preparation, presentation, and service in a tropical resort setting.

Key responsibilities

• Develop, design, and regularly update menus reflecting authentic Russian flavors, seasonality, and creativity.
• Plan and oversee daily mise-en-place, production schedules, and ensure smooth service execution.
• Supervise, train, and mentor the culinary team, fostering skill development and adherence to standards.
• Monitor and control food costs, portion sizes, waste, and overall kitchen expenses.
• Ensure full compliance with HACCP, food safety regulations, and internal hygiene standards.
• Collaborate with Executive Chef and F&B leadership on menus, promotions, and special offerings.

Required profile

• Professional degree in Culinary Arts or restaurant management.
• Minimum 2 years proven experience as a Chef de Cuisine in a high‑end restaurant specializing in Russian cuisine.
• Strong leadership, team management, and organizational abilities.
• Excellent communication skills in English and Russian.
• Ability to work effectively in a fast‑paced, high‑pressure environment.

Required skills

• In‑depth knowledge of HACCP and food safety regulations.
• Proficiency with kitchen management software and cost‑control techniques.
• Fluency in English and Russian.
