Bar and Beverage Manager

About the role

Bulgari Resort Ranfushi is looking for a Bar and Beverage Manager responsible for the daily operations of the bar and lounge and for supervising the staff. The role helps promote the lounge, plan the menu, maintain standards, support servers during peak periods and manage liquor inventories and controls, while keeping the operating budget and ensuring guest and employee satisfaction.

Key responsibilities

• Implement the agreed beverage policy and procedures across the property and comply with local, state and federal liquor laws.
• Manage beverage control: days on hand, perpetual inventory, bar pars, portion control, cost controls, sales analysis, issues and returns, food standards and period-end inventory.
• Monitor adherence to liquor control policies, manage inventories within budget and help develop menus and promotions.
• Attend pre- and post-convention meetings to understand group needs and help manage controllable expenses.
• Train staff on liquor control policies, supervise staffing levels and communicate event details to the team.
• Provide excellent customer service, gather guest feedback, handle complaints and review comment cards and satisfaction results with employees.
• Support the orientation programme, take part in corrective action plans and strengthen the food and beverage team by helping other outlets when needed.

Required profile

• High school diploma or GED, or a 2-year degree in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration or a related field.
• 4 years of food and beverage experience with an ultra-luxury brand, or 2 years with a degree.
• Mixology background required; experience with one of the best 50 bars is highly recommended.
