Sous Chef - Japanese Cuisine

About the role

Jumeirah Olhahali Island in the Maldives is a contemporary island resort with beach and over-water villas, wellness experiences and diverse dining. It is looking for a Sous Chef specializing in Japanese cuisine to join its culinary team.

Key responsibilities

• Ensure guest expectations are exceeded through efficient, friendly and attentive service, and actively contribute to excellent guest service.
• Speak with guests whenever possible to gather feedback for improvement.
• Carry out frequent spot checks in the assigned section to monitor compliance with procedures, hygiene, storage and par stocks.
• Monitor the preparation of food for special orders, buffets, VIP requests and other functions.
• Maintain all recipes, costing and SOPs, including pictures and production instructions for each section.
• Keep kitchen equipment in good working order with minimal breakages.
• Keep close communication with supervisors on equipment, working conditions, guest requests and team relations.

Required profile

• Minimum 2 years of experience in the same role in a luxury resort or high-end restaurant.
• Experience guiding and developing junior colleagues through training.
• Ability to handle guest complaints calmly and professionally.
• Ability to work under pressure in a fast-paced environment.

Required skills

• Familiarity with kitchen equipment, hygiene practices and workflow.
• Strong communication and interpersonal skills.
