Sous Chef – Mediterranean Cuisine

About the role

Join the culinary team at Shimmers Kitchen on Jumeirah Olhahali Island, Maldives, as a Sous Chef specializing in Mediterranean cuisine. You will help deliver exceptional dining experiences in a luxury resort setting.

Key responsibilities

• Oversee food preparation for special orders, buffets, VIP requests and other functions.
• Conduct spot checks to ensure compliance with hygiene, storage and par stock procedures.
• Maintain recipes, costing, SOPs and production instructions for your section.
• Ensure kitchen equipment is well maintained and minimise breakages.

Required profile

• Minimum 2 years experience as a Sous Chef in a luxury resort or high‑end restaurant.
• Proven ability to train and develop junior team members.
• Strong communication skills and ability to handle guest complaints calmly.
• Comfortable working under pressure in a fast‑paced environment.

Required skills

• Familiarity with kitchen equipment operation and maintenance.
• Knowledge of hygiene standards and proper workflow in a professional kitchen.
