Chef de Partie – Open Fire & Seafood Grilling

About the role

The Chef de Partie will join the Open Fire Cuisine team at Alayabay, Jumeirah Olhahali Island, delivering high‑quality seafood grilling and fire‑cooked dishes for discerning guests.

Key responsibilities

• Prepare and cook menu items using open‑fire and seafood grilling techniques while maintaining the highest standards of taste and presentation.
• Inspect, select, and use only premium food items, ensuring proper storage, portion control, and hygiene compliance.
• Maintain a clean and organized pantry, conduct daily inventory of walk‑in and reach‑in storage, and follow all safety and SOP regulations.
• Support junior colleagues through training, share knowledge during briefings, and adapt to different kitchen stations as needed.

Required profile

• Minimum of 2 years’ experience in a luxury 5‑star hotel or resort kitchen.
• Hands‑on experience guiding and developing junior team members.
• Ability to work under pressure in a fast‑paced environment and openness to continuous training.

• Seafood grilling expertise.
• Familiarity with kitchen equipment, hygiene practices, and workflow management.
