Sous Chef – Italian Cuisine at Casalucia, Maldives

About the role

The Sous Chef will lead the Italian cuisine section at Casalucia, Jumeirah Olhahali Island, ensuring exceptional guest experiences through high‑quality food preparation and service.

Key responsibilities

• Oversee food preparation for special orders, buffets, VIP requests and other functions.
• Conduct spot checks to ensure compliance with hygiene, storage and par stock procedures.
• Maintain recipes, costing, SOPs and production instructions for the assigned section.
• Ensure kitchen equipment is well‑maintained and minimise breakages.
• Communicate effectively with superiors about equipment, environment, guest requests and team matters.

Required profile

• Minimum 2 years of experience as a Sous Chef in a luxury resort or high‑end restaurant.
• Hands‑on experience training and developing junior staff.
• Ability to resolve guest complaints calmly and professionally.
• Strong communication and interpersonal skills.

Required skills

• Familiarity with kitchen equipment, hygiene practices and workflow.
• Ability to work under pressure in a fast‑paced environment.
